Pimms and Tonic

Pimms and Tonic

Ingredients

  • Pimm’s & Tonic
  • 120ml Pimm's No. 1
  • 60ml freshly squeezed lemon juice from about 2 lemons
  • 15ml ounce simple syrup
  • Tonic, chilled

Method

  1. Add Pimm's, lemon, and simple syrup to a cocktail shaker and fill with ice.
  2. Shake until well chilled, about 15 seconds.
  3. Strain, dividing evenly between two Collins glasses filled with ice.
  4. Top with tonic, stir gently, and serve.

Note: To make simple syrup, combine 1 cup water with 1 cup sugar in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using. Simple syrup will keep in a sealed container in the refrigerator for up to 5 days.
